The programme is made up of several modules that cover a range of topics related to patisserie and & confectionery and bakery work. These modules has the following compentancy unit (CU) which include:
- CU01-Safety, Health and Hygiene Practices: This module covers the fundamental principles of food safety and hygiene. You will learn about the importance of maintaining a clean and safe food preparation environment.
- CU02-Batter and Dough Preparation: In this module, you will learn how to prepare different types of batter and dough for a variety of pastry products. You will also learn about the various techniques used to make these products.
- CU03-Filling and Cream Preparation: This module covers the preparation of fillings and creams that are commonly used in pastry products. You will learn how to make different types of fillings and creams and how to use them effectively in your pastry products.
- CU04-Pudding Preparation: This module covers the preparation of puddings, including traditional and modern varieties. You will learn about the techniques used to make these desserts and how to present them effectively.
- CU05-Cookies Preparation: This module covers the preparation of cookies and biscuits. You will learn about the different types of cookies and biscuits and how to make them.
- CU06-Malaysian Desserts and Kuih Preparation: In this module, you will learn about traditional Malaysian desserts and kuih. You will learn about the ingredients used to make these desserts and how to make them effectively.
- CU07-Cakes Preparation: This module covers the preparation of cakes, including sponge cakes, layered cakes, and cheesecakes. You will learn about the techniques used to make these cakes and how to decorate them effectively.
- CU08-Pastry Product and Material Handling: This module covers the handling and storage of pastry products and materials. You will learn about the techniques used to store and handle these products and materials effectively.
- E01-Pastry Product Sales and Marketing: In this module, you will learn about pastry product sales and marketing. You will learn about the techniques used to market pastry products effectively and how to sell them to customers.
- E02-Soft and Hard Roll Preparation: This module covers the preparation of soft and hard rolls. You will learn about the different types of rolls and how to make them effectively.
